Spumette of hazel-nuts

Makes 4 servings

Ingredients: -200 gr. of hazel-nuts skinless -4 white of eggs -200 gr. of icing sugar -the diced peel of a lemon -butter and flour for the pot.  

Directions: Whip to a froth the white of eggs and add little by little the icing sugar, continuing to stir. Add the hazel-nuts and the peel of the lemon. Put the compound in a boll-shaped in an heat-resistant pan grease with butter and dredge of flour. Bake in a preheated oven for 30 minutes.
