Peperonata

Makes 4 servings

Ingredients: -6 red capsicum, yellow, green -1 onion -8 mature tomatoes -oil of best-quality -salt and pepper -10 leaves of basil.

Directions: Peel and cut thinly the onion. Clean and cut the capsicum seedless. Brown the onion and the capsicum in a pot with a few of oil.  Add salt and leaves of basil. Cook for an hour. Place on a serving platters and serve.
