Pumpkin in Bittersweet

  Makes 4 servings

Ingredients: -750 gr. of yellow pumpkin -2 cloves of garlic -some leaves of mint -oil of best-quality -1 teaspoon of sugar -salt and pepper -1 glass of vinegar.

Directions: Cut the yellow pumpkin in regular slices and fry it in hot oil. Add salt and pepper. Set aside the pumpkin and eliminate part of the oil from the frying pan. Replace the frying pan on the fire and add the vinegar and the sugar stirring constantly with a wood spoon and simmer on low fire until the sugar has melted. Extinguish the fire and pour sauce over the slices of pumpkin, add the chopped garlic and the mint. Cool and serving platters.
